Sweet Potato and Coconut soup
1 Sweet potato
250ml Coconut cream
1 Lemon
1 tsp Dried Coriander
1/2 tsp Ground ginger powder
1 tsp Ground garlic powder
1/2 tsp Turmeric
Himalayan salt
Black pepper
White pepper
Bake the sweet potato in the oven at 250c, for approximately 60mins, Remove the baked sweet potato from itsĀ“s peal into a pot, add the coconut cream and the spices. Blend and heat on the hob. Add water to get your desired soup consistency, I like the dish to be thick so I only added 1/2 dl of water. Serve with Himalayan salt and White pepper.
Tip: If you wish to speed up the process, chop the sweet potato into quarters
