Lentil and Tomato Stew
6 vine Tomatoes
1 big red Onion
50g grated Ginger
4 Garlic cloves
125g dried Green lentils
100g dried red split lentils
1/2 tsp ground cinnamon
2 tsp dried parsley
350 ml vegetable stock
Himalayan salt
Pepper
Chop the onions, great the ginger and garlic, lightly fry for a few minutes.
Roughly chop the tomatoes.
Put all of the ingredients in on large pot, add a pinch of Himalayan salt, cover and let is simmer for approximately 20min. Serve with Himalayan salt
