Broadbean Steaks with Chickpea bread
Serves 4
Broad bean Steaks
3dl Broad beans (dried)
1 Onion
2 tbs dried Parsly
1 tsp Baking Soda
2 tsp Powdered red pepper
1 tsp Dijon mustard
1 tsp Himalayan salt
3/4 dl Chickpea flour or Full grain wheat
Chickpea bread
1 cup Chickpea flower
1 cup water
1/2 tsp Pinch of Kosher salt
1 1/2 tbs Olive oil
Salad
Goat or Feta cheese
1 Red pepper
2 Lettuce packs
2 Avocado
1 small Cucumber
Broad-bean Steaks
Soak the beans over night. Blend the beans, the onions, parsley and spices. Add 0.5 - 1 dl water if necessary. Make small patties and fry them with a lot of olive oil.
Chickpea bread
Make the chickpea batter and let it rest 30 mins. Turn oven to 225 C. Heat an oven-safe pot approximately 20cm in dimeter. Drizzle olive oil in the pot, pour the chickpea batter in the pot and place high up in the oven for 10min, using grill setting.
Serve the dish with Himalayan salt, black pepper and olive oil.
